Dr. Cassie M. Mitchell is an Assistant Professor of Pediatrics within the Section of Pediatric Diabetes and Endocrinology at the University of Oklahoma Children's Hospital and TSET Health Promotion Research Center. She is the Director of Nutrition Research for the Harold Hamm Diabetes Center, a Registered Dietitian Nutritionist (RDN), and a member of the OU Health Campus' Stephenson Cancer and Harold Hamm Diabetes Centers. She is also an affiliate member of the Native American Center for Cancer Health Excellence and the Center for Indigenous Resilience, Culture, and Maternal Health Equity.
Dr. Mitchell has more than a decade of training in nutrition, exercise physiology, and health promotion. She completed two postdoctoral research fellowships and obtained three grants at local and national levels (HHDC, ADA, and NIH) during her training. Her research program focuses on the development and translation of clinical nutrition research to inform community Food Is Medicine interventions. In particular, Dr. Mitchell is interested in nutrition and Food Is Medicine to support the health of women and Indigenous community members of Oklahoma across the lifespan.
On a final note, Dr. Mitchell is extremely passionate about mentoring under-represented minorities, as she herself is a proud member of the Citizen Potawatomi Nation and a first-generation college graduate.
